  • 4 cups shredded beef birria
  • 2 cups birria broth (consomé)
  • 16 thick corn tortillas
  • 1 pound Oaxaca cheese or Monterey Jack cheese
  • Diced red onions for garnish
  • Fresh cilantro for garnish
  • Lime wedges for garnish

Instructions

  1. Prepare the beef birria according to your preferred recipe and reserve both the meat and broth.
  2. Preheat a large skillet or cast iron griddle over medium-high heat with cooking spray or oil.
  3. Dip each tortilla into the warm consomé, coat both sides, and cook on the skillet for about 30 seconds per side.
  4. Assemble tacos by adding 2 tablespoons of cheese and ¼ cup of shredded birria to one half of each tortilla. Fold to form a taco.
  5. Cook for another 30-60 seconds until the cheese melts and the tortillas are crispy. Remove from heat and repeat with remaining tortillas.
