  • 1 lb sausage (your choice)
  • 4 medium potatoes, peeled and diced
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sear the sliced sausage until browned, then set aside.
  3. In the same skillet, add another tablespoon of olive oil and sauté the diced potatoes for about 8–10 minutes until lightly browned.
  4. Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent (about 3–4 minutes).
  5. Layer the sautéed mixture in the greased baking dish with asparagus. Season with thyme, salt, and pepper before pouring broth over everything. Top with seared sausage slices.
  6. Cover with foil and bake for approximately 40–45 minutes until potatoes are tender.
  7. Remove foil, sprinkle cheddar cheese over the top, and bake uncovered for another 10 minutes until melted.
