  • 1 ½ pounds ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 5 large potatoes, peeled and cut into chunks
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 cup shredded cheddar cheese

Instructions

  1. In a skillet over medium heat, brown the ground beef with onion, garlic, and red bell pepper until cooked through. Drain excess fat.
  2. In a bowl, whisk together the cream of mushroom soup, milk, salt, black pepper, and paprika.
  3. Layer half of the potatoes in the slow cooker followed by half of the meat mixture and half of the soup mixture. Repeat layers.
  4. Cover and cook on low for 5-6 hours or until potatoes are tender.
  5. Sprinkle cheese on top and cook for an additional 20 minutes until melted.
  6. Garnish with fresh parsley before serving.
