  • 1 (3.4 oz) instant lemon pudding mix
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs

  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 1/3 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • 3/4 cup plain Greek yogurt
  • Zest of 1 lemon
  • 3 tablespoons butter, softened (for frosting)
  • 1 1/2 cups powdered sugar
  • 3 tablespoons lemon juice (for frosting)
  • 1 teaspoon lemon extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line and grease a loaf pan.
  2. In a bowl, whisk together flour, pudding mix, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, butter, vanilla extract, lemon extract, lemon juice, vegetable oil, and Greek yogurt until well combined.
  4. Gradually add the dry ingredients to the wet ingredients until just combined. Fold in lemon zest.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Let cool for 10 minutes in the pan before transferring to a wire rack.
  7. For frosting: Beat together butter, lemon juice, and extract; gradually add powdered sugar until smooth. Frost cooled loaf.
