  • 2 cups uncooked rice
  • 2 small heads of broccoli, chopped
  • 3 large chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • 2 teaspoons sesame oil
  • 1 teaspoon ground ginger
  • 2 teaspoons arrowroot powder mixed with 2 tablespoons water (slurry; can substitute cornstarch)
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha
  • 23 tablespoons water
  • Sesame seeds

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Steam the chopped broccoli until fork-tender and set aside.
  3. Cut the chicken into bite-sized pieces; toss with olive oil and seasonings.
  4. Preheat an air fryer to 400°F (200°C) and cook the chicken for about 12 minutes or until cooked through.
  5. In a saucepan over medium heat, combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ginger, and thicken with arrowroot slurry.
  6. Mix mayonnaise with sriracha for the spicy mayo drizzle.
  7. Assemble bowls by layering rice, broccoli, chicken, sticky sauce, spicy mayo, and garnish with sesame seeds.
