  • 3 Ancho chilies
  • 4 lbs boneless beef chuck
  • 1 extra-large yellow onion
  • 1 red bell pepper
  • 4 garlic cloves
  • 2 cups tomato purée
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 ½ teaspoons ground coriander
  • ½ teaspoon allspice
  • 2 teaspoons Mexican oregano
  • 2 teaspoons unsweetened cocoa powder
  • 3 cups low-sodium chicken broth, plus more as needed
  • 2 tablespoons olive oil
  • Salt and black pepper
  • 26 jalapeños (optional)
  • Tortilla chips
  • Shredded cheddar cheese
  • Chopped cilantro
  • Lime wedges
  • Sour cream
  • Mexican hot sauce
  • Diced onions (green, purple, or yellow)

Instructions

  1. Toast the dried chilies in a large pot over medium heat for about 2 minutes per side until aromatic. Add chicken broth, bring to a boil, then steep for 5-10 minutes. Blend until smooth.
  2. In the same pot, sear beef chunks in olive oil until browned on all sides. Remove and set aside.
  3. Sauté chopped onion and bell pepper in the pot for 4 minutes; add minced garlic and spices, cooking for another minute.
  4. Stir in tomato purée and blended chili mixture along with seared beef. Bring to a simmer and cook on low for 2–3 hours until beef is tender.
  5. Adjust seasoning before serving hot.
