  • 1 ¾ cups beef broth
  • 1 (28 oz) can fire-roasted crushed tomatoes
  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 tablespoons tomato paste
  • 1 ½ teaspoons garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Sauté chopped onion for about 2 minutes until softened.
  3. Add ground beef and cook until browned; drain excess fat.
  4. Stir in minced garlic along with spices and tomato paste; mix well.
  5. Pour in beef broth and scrape the bottom of the pot.
  6. Add fire-roasted tomatoes and both types of beans; stir to combine.
  7. Bring to a boil, then reduce heat to low and let simmer for 1–2 hours.
