  • 1 large egg
  • 1 large egg yolk (discard the white)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (188 grams) (aka plain flour)
  • 1/4 teaspoon salt
  • 2/3 cups chocolate chips (120 grams)
  • 28 Oreo cookies
  • 1/2 cup unsalted butter (112 grams) (cubed)
  • 6 oz dark chocolate (170 grams) (50-70% or semi-sweet)
  • 1 cup granulated sugar (200 grams)
  • 2 large eggs
  • 1/2 cup all-purpose flour (63 grams)
  • 1/4 cup cocoa powder (23 grams)
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a 9×13 inch pan by greasing it and lining it with parchment paper.
  2. In a mixing bowl, cream softened butter with brown and white sugars until smooth. Add eggs and vanilla; mix until combined.
  3. Gradually incorporate flour and salt, then fold in chocolate chips.
  4. Spread half of the cookie dough in the prepared pan, layer with Oreos, then add the remaining cookie dough on top.
  5. In another bowl, melt butter and dark chocolate together until smooth. Stir in sugar, then add eggs one at a time. Mix in flour, cocoa powder, and salt until just combined.
  6. Pour the brownie batter over the layered cookies and Oreos and bake for about 50 minutes or until a toothpick comes out with moist crumbs.
