  • 28 oz can diced or crushed tomatoes
  • 4 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons olive oil
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon cayenne pepper
  • 1 ¼ cups chicken broth

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onion, garlic, and red bell pepper for 5–7 minutes until softened.
  2. Add ground turkey; cook until browned.
  3. Stir in chili powder, cumin, and salt; cook for about 20 seconds.
  4. Add tomatoes, chicken broth, kidney beans, and corn; bring to a boil.
  5. Reduce heat and simmer for 30–45 minutes until thickened.
