- 1 medium spaghetti squash
- 1 pound boneless, skinless chicken (cut into bite-sized pieces)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 2 tablespoons butter
- 4 cloves garlic (minced)
- 1 shallot (minced)
- 2 tablespoons sun-dried tomatoes (julienne cut)
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 3 ounces baby spinach
- Fresh parsley for garnish (optional)
Instructions
- Cook the spaghetti squash: Pierce the squash multiple times and microwave for 8-12 minutes until tender. Let it cool.
- Season chicken with salt, pepper, and Italian seasoning.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add chicken and cook until no longer pink, about 7 minutes. Remove and keep warm.
- In the same skillet, add remaining butter, garlic, and shallot; sauté for 1-2 minutes. Stir in sun-dried tomatoes for another minute.
- Pour in heavy cream and bring to a simmer before mixing in Parmesan cheese and spinach until melted.
- Cut the cooled spaghetti squash in half lengthwise, remove seeds, and scrape strands with a fork.
- Combine spaghetti squash strands with the sauce; return chicken to the pan to mix well.
- Serve warm, garnished with fresh parsley if desired.
