  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tablespoons sun-dried tomatoes (julienne cut)
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the spaghetti squash: Pierce the squash multiple times and microwave for 8-12 minutes until tender. Let it cool.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add chicken and cook until no longer pink, about 7 minutes. Remove and keep warm.
  4. In the same skillet, add remaining butter, garlic, and shallot; sauté for 1-2 minutes. Stir in sun-dried tomatoes for another minute.
  5. Pour in heavy cream and bring to a simmer before mixing in Parmesan cheese and spinach until melted.
  6. Cut the cooled spaghetti squash in half lengthwise, remove seeds, and scrape strands with a fork.
  7. Combine spaghetti squash strands with the sauce; return chicken to the pan to mix well.
  8. Serve warm, garnished with fresh parsley if desired.
